Baby Bella Habanero Sandwiches
Eating sans meat is fine with me but sometimes my hubby wants something....heartier. So, when I saw the baby bella mushrooms on sale a couple weeks ago, I knew I could make a yummy sandwich that would be meatier than our usual fare. They did not disappoint!
This sandwich was very easy. I started by sautéing up an onion in a little olive oil. Then I added the baby bellas to the mix, along with some kosher salt and pepper. Once they were done, I shut off the heat and added a little balsamic vinegar to the mix. I topped a slice of foccacia with the mushrooms, fresh spinach, a teaspoon of Stonewall Kitchen's Habanero Mango Hot Sauce and a slice of provolone. Then, baked it in the oven at 350 degrees for 12 minutes. Tasty, meaty and hearty. It was a nice warm sandwich to eat on a cool March evening. Of course, my camera's battery died before I could snap the finished product but you get the idea.
Oh and that hot sauce is super spicy so beware. But, it's really good!
Yum! I do love spicy :-) I bought some baby bellas last week and sauteed them with onion/garlic/kale and put a good amount of red pepper flakes on it for me :-)
