Broccoli Potato Soup
I've talked a lot about our Northeast weather lately. We have had quite a Winter with a lot of snow, cold temperatures and proof that once again, the weather is unpredictable. While we are ready for Spring around here, I have to say that some of our storms have been a nice break from our daily grind. Our big blizzard hit on a Friday/Saturday and our latest storm arrived on a Saturday/Sunday. Those are the best kind. We wake up in sort of a magical Winter Wonderland and it's always nice not to "have to" worry about getting out, going to school or work. We have plenty of time to dig out and play in the snow. What coule better than coming inside to a nice bowl of soup?
This was my first time making Broccoli Potato Soup and it was a hit! It's hearty and a perfect comfort food to return to after a day outside. Since we are trying to reduce the dairy we are eating these days, I used nutritional yeast in place of the cheese the original recipe called for. It worked!
Broccoli Potato Soup
1 small chopped onion
1 chopped carrot
1 chopped celery stick
2 cloves of minced garlic
1 tbsp butter
2 tbsp flour
salt and pepper
2 cups chicken or veggie broth
1 cup almond milk (or regular)
2 medium potatoes, peeled and chopped
3-4 cups of chopped brocoli
1 cup of nurtritional yeast or cheddar cheese
- Chop onion, celery and garlic. In a soup pot, melt butter and add your chopped veggies until tender over medium heat (about 5 minutes)
- Add flour, salt and pepper and stir until smooth consistancy
- Add broth, milk and potatoes and bring to a boil on high for 10 minutes or until potatoes are tender
- Add brocoli and stir, then transfer to your crockpot
- Using an immersion blender, blend the soup for a few minutes until it is a creamier consistancy. Keep slow cooker on low for a couple hours and enjoy
The result was a thick, creamy, hearty soup that was requested the very next day. This soup is delcious, economical and healthy, my favorite combination!
This sounds delicious! I haven't tried making soup with almond milk yet...I typically go for the coconut milk, but I think I will have to try it out! Great job on incorporating the nutritional yeast too ;-)
ReplyDeleteI agree this soup sounds delicious! We don't eat dairy so we use lots of almond milk and coconut milk in our recipes. I will have to make this soup really soon!

I am going to have to admit that I have absolutely no idea what nutritional yeast is, so I will be visiting ye olde Google button right after I leave this comment. It sounds like something my sister would probably be interested in/enjoy since she is working hard toward going vegetarian. Your photo of the soup is great, and it looks like a really tummy-filling treat! Hmmmm...Lenten lunch! Thanks for the idea. I know I have all the ingredients down there in the kitchen, so I'm good!
