Healthier Peanut Butter Cups

Last week I pinned a recipe for these babies and was so excited to make them.  The idea of some healthIER sweets made me giddy.  These surprised me quite a bit, they are delicious and sort of resmble a peanut butter cup.  The fact that they don't have any refined sugar makes me very happy.  I have them in the freezer for those days when I just am craving a sweet and let's face it, that happens quite often, even to the best of us!  They are creamy and easy.  Give them a try!

Oh and did I mention only five ingredients? 

- 1/2 cup almond, peanut or sunbutter
- 1/2 cup quality cocoa powder
- 1/2 cup coconut oil
- 1/4 cup raw honey, agave or maple syrup
- 1 tsp vanilla

Melt coconut oil and add all ingredients together.  The recipe stated to blend in food processor or blender but I just stired everything until it was all very smooth.  Good arm workout ;) I then filled paper mini muffin liners with 1 teaspoon in each.  Place in freezer for about 30 minutes and then pop them out and store in a ziploc bag.  You could make them larger or smaller but since I was looking for a more portion controlled snack, I wanted them a little smaller.   The total recipe has about 2040 calories so simply divide the number of cups you make to find out the calorie count.  I made two dozen so about 85 calories each, not bad!

  3. Ooooh yummy! This is just the kind of thing that might be dangerous for me haha! My husband is a crazy person and doesn't like peanut butter, so anytime I make something with peanut butter it's all mine. I love that you keep them in the freezer and just pop one (or several) out when you get a craving :)
