Very Berry Muffins
I am finally starting to feel a shift in the weather, yesterday was beautiful here and inching towards 50 degrees and I'm hearing much of the same for the weekend. It has us dreaming and anticipating days with lighter jackets, getting the yard completely raked and preparing our garden. The other day, the girls and I talked a lot about our plans to pick berries this Summer and lots of them! Strawberries first, followed by our ever so short cherry season, raspberries, blueberries, peaches and lastly, apples. I was pretty excited when I scored a couple bags of frozen organic berries from Traders Joes and my local market on my last trip. I had intended to make smoothies (yes, we do our best to east seasonally and locally but by April we are craving some berries). We decided to also whip up a batch of muffins - and these are bursting with berries. So much that we are even more anxiously awaiting eating local all Summer long! Hurry, please!
Very Berry Muffins (from Weelicious)
Ingredients:
1/2 cup all purpose flour
3/4 cup whole wheat flour
3/4 cup old fashioned oats
2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup brown sugar
1 large egg, whisked
1 teaspoon vanilla extract
3/4 cup milk
1/3 cup canola or vegetable oil
2 cups frozen berries
Ingredients:
Directions:
1. Preheat oven to 400 F.
2. Place the first 6 ingredients in a bowl and combine.
3. Combine the egg, vanilla extract, milk and oil in a separate bowl.
4. Slowly combine the dry ingredients into the wet ingredients.
5. Gently mix the frozen berries into the batter, do not over mix or the berries will bleed.
6. Pour batter into greased or muffin lined regular sized tins.
7. Bake for 20-22 minutes.
8. Allow muffins to cool for 5 minutes then remove to a cooling rack.
9. Serve.

I feel like by the time April comes around, we are just about out of anything to eat :-) The preserved food is just about gone, there are no roots left to roast, and the only local thing we can find is very expensive baby spinach. It is times like this when I am really happy that I can go to the grocery store when my own winter food storage fails miserably :-)

Yummy! These sound so good. I really love picking berries in the summer. One of my favorite things to do! We just planted some blueberry bushes so hopefully we'll be picking at our own place soon :) Have a great weekend!
