Balsamic Chicken Chopped Salad

As Summer winds down, I find myself rushing to consume the wonderful tastes of Summer: before they are gone!  Our garden is still producing plenty of gold and cherry tomatoes, onions and cucumbers so why not mix them into a fresh salad?  Since I'm working more now and feel busier than ever, this is the perfect salad to make to enjoy for a few days in the week.  Delicious over fresh greens or thrown into a wrap!  Thank you Lemon Tree Dwelling (yet again) for another winning recipe!  Check out Cathy's Harvest Chicken Salad Pita recipe here!
Balsamic Chicken Chopped Salad
1 c. chopped, cooked chicken
1-2 c. cherry tomatoes, sliced
1/2 c. onion, chopped
1 c. cucumbers, chopped
1/2 c. celery, chopped
2 Tbsp. olive oil
2 Tbsp. balsamic vinegar
1 Tbsp. honey

Salt and pepper to season

1. Combine chicken, tomatoes, onion, cucumber and celery in a medium bowl.
2. In a separate bowl, mix olive oil, balsamic vinegar & honey and add to chicken mixture. Stir to combine.
3. Serve over fresh field greens or in a wrap
