Spinach Ziti Soup
This delightful, healthy soup is the perfect one to slurp up on a chilly Fall day. This past Summer, my friend shared one of her favorite soup recipes with me. It sounded simple and yummy, I knew I'd be making itas soon as the seasons changed. This past weekend, I finally tried it out! Tasty and hearty, our entire family enjoyed it! It will become a favorite in the months to come!
Spinach Ziti Soup
Ingredients:
- 3 Tbls olive oil
- 1 small onion, chopped
- 1 tbl garlic, chopped
- 1- 10 oz pkg fresh spinach, chopped (stems removed) or frozen chopped spinach
- 1 tsp dill
- 1 tsp parsley
- 1 tsp italian seasoning
- 2- 28 oz cans crushed tomatoes, pureed
- 4-6 cups vegetable or chicken stock
- 1/2 lb ziti
Directions:
- Sauté onion, garlic and spinach in oil until done.
- Add stock, tomatoes, and herbs. Simmer.
- Cook ziti separately. Drain
- I would suggest that you leave the pasta out even for leftovers, so it doesn't absorb the liquid.
- Top with parmesan cheese, crushed red pepper and serve with a slice - or a hunk of crusty bread!
