Broccoli Grape Nut Salad (Easy and Economical!)
This past weekend, we got together with family to celebrate the holiday. It was great to see everyone and of course, the beloved cousins! It's fun to catch up and see how well they get along, we are quite lucky! We are also quite lucky to have feasted on some delicious salads and grilled food! Including this broccoli salad! A different take on the broccoli salad you might have had in the past with raisins, this one uses grapes to give it a slight sweetness, sunflower seeds for an extra crunch and broccoli for it's benefit! Different but certainly yummy, judging by the fact that it was completely gone at the end of the day, I think we will be making it a lot this Summer! Extra bonus? The kids loved it so that's always a plus in my book!
Ingredients
2 heads of broccoli, cut
1/2 cucumber, peeled and diced
1 cup sliced red grapes
3 tablespoons unsalted sunflower seeds
Dressing
1/4 Mayonnaise
1/4 Cup Sour Cream
2 tablespoons lemon juice
Salt and pepper
- Toss your vegetables and grapes in a large bowl.
- In a seperate bowl, combone your mayonnaise, sour cream and lemon juice.
- Pour dressing over your salad, top with sunflower seeds and toss again
- Season with salt and pepper
- Enjoy
