Nutty Raspberry Yogurt Parfait Recipe & Unraveling
We only get what we can handle right? I'm trying hard to believe that as 2015 has started off in a challenging way for me. I know I talked about what's been going on with my Mom and it continues to be difficult as I now have become one of her caregivers. It is both awkward and uncomfortable for the two of us. She's fiercely independent and doesn't like to take help from anyone, so at times it's been harder than I had imagined. The reality of the situation is definitely settling in for all of us and the days are long and emotional at times. I have faith that her body will heal and she will reclaim her life but for all intensive purposes it's "on hold" while she heals.
This past weekend I certainly felt the pull when my littlest came down with the stomach bug. Again, I remind myself that no matter how wonderful of a planner I am and no matter if I had all the laundry caught up and the house clean in anticipation for being gone on Sunday, life happens. Life happens and sometimes you have absolutely no control over it but again, I can control how I react to the situation. The theory was once again tested at 1AM on Sunday night. Do you ever feel like things start to unravel all at once? In between taking care of your child, your dogs are going crazy and barking? Then the minute you settle down and start to fall asleep your other child wakes up from a nightmare? All these things are definitely challenging but part of life and things that we all deal with from time to time. Needless to say the weekend with neither exciting or restful but was certainly memorable. I do find myself in the heat of it all wishing things could be easier. I want to get to the point where instead of that I'm simply thankful that things are not harder.
At the end of the day, I'm exhausted and I find myself still reaching for dinners that are healthy and satisfying but most importantly, EASY. That's where this simple yogurt parfait comes in handy. Packed with protein, it's satisfying and comforting, which is exactly what I need when life gets a little more crazy.
Nutty Raspberry Yogurt Parfait
- One cup of raspberry Greek yogurt
- I half a cup of Trader Joe's nutty raspberry trail mix
- Half a cup raspberries
- 2 teaspoons bare naked fit raspberry granola
In a parfait glass, alternate layering your raspberries and yogurt until you reach the top.
Combine trail mix and granola, sprinkle on top of your yogurt parfaits
You are going through a challenging time right now. Being a caregiver is difficult work. I've been learning the hard way that moms really need to take care of themselves a lot more than we think we do and eating healthy is a good start. I hope your week turns around for you!
ReplyDeleteYum! The parfait looks awesome! I have been relying on eggs...pretty much every day recently :-) Wishing we still had our chickens at this point! Keep your head up. Life is challenging right now. Keep thinking positive thoughts! I know, it is difficult when it seems like it is one thing after another. Make sure you take some time for yourself. Take a nice bath, have a good cry, and then read a good book :-)
