Things Do Work Out!
Don't you just love it when things work out like you planned? I can't tell you how many recipes I've had high hopes for that have turned out to be just, eh. But sometimes, they turn out even better than you expected! That was the case when I whipped up this Spring Quiche that was inspired by Lemon Tree Dwelling's Bacon Swiss & Asparagus Bake. Of course Cathy's came out beautifully and mine, well, it needs a bit more work (and a little less crust cooking). But, overall we were giddy about the beautiful result! I opted for a similar quiche but utilized Ham Swiss & Asparagus with a touch of dill. All the carnivores in my family raved about it. If you want to try this recipe, check out Cathy's recipe and simply replace the bacon for about a cup of chopped ham and pour into your favorite pie crust. I love that this is easy and beautiful, the perfect delicious brunch to serve with a delicious salad! We paired ours with a Roasted Beet Salad that was simple and so good!
Roasted Beets served over a bed of mixed greens lightly tossed in balsamic and topped with chopped almonds...flavorful, healthy and perfectly paired with a couple Spring quiches!
You know what else I love? That sometimes, even when I am at my wit's end regarding something - like this past Friday and the weather...something wonderful happens! We had a 65 degree day yesterday, FULL sun and you know what? It's going to be 70 degrees today! Yes, sometimes things just have a way of working out! It's so nice to know my comforter coat can be stashed away until the next little arctic surprise!

Well awesome about the weather there! I'm happy for you! I had a very similar beet salad last weekend but it also had crumbled blue cheese on top and good golly it was delicious! I made a quiche that was fantastic a few years back but it never became part of my routine. You can substitute a lot of different meats and veggies you have on hand. I hope you have a great day!

DeleteIt's always so exciting when a recipe turns out better than you hoped. I have had both kinds this past week. Focusing only on the good ones though :) Your quiche looks delicious, and I always put off making them since we are only 2 people. Do you have any idea how it would reheat?

We are starting to warm up here too. I still have the Winter coats hanging on the coat tree, the wind still can get cold.
