When you think of the holidays, what do you think of most? For me, I remember wonderful times with family and friends, lots of laughter and good food. There is nothing like the energy in the kitchen around Thanksgiving time, when recipes are being created and tested. We enjoy a traditional Thanksgiving dinner with the addition of a few new recipes every year. Everyone enjoys the old favorites but we also look forward to trying something different.

I started thinking about the flavors I love most this time
of year. They include pumpkin and
cranberry but they don’t always have to be used in desserts. I love savory appetizers with layers of flavor. I thought this would be the
perfect time of year to create a delicious appetizer using Pillsbury’s Grands
Biscuits and the flavors of the season: a pumpkin and cranberry appetizer.
I found everything I needed for this recipe at my local Shaw’s
Supermarket. This recipe was fun to
create, economical and used the delicious Pillsbury™ base which saved time. I don’t know about you but I can always use
more time, especially this time of year when there’s cleaning and preparation to
be done. This recipe helped me save time
without sacrificing taste.
Parmesan Pumpkin Cranberry Tarts
Ingredients
1 tube of Pillsbury Grands! Jr Biscuits
3 tablespoons butter
1 cup diced onion
1/2 teaspoon thyme
1 cup canned pumpkin
1/2 cup cranberries, dried
1/4 cup Parmesan cheese
Directions

Ingredients
1 tube of Pillsbury Grands! Jr Biscuits
3 tablespoons butter
1 cup diced onion
1/2 teaspoon thyme
1 cup canned pumpkin
1/2 cup cranberries, dried
1/4 cup Parmesan cheese
Directions
- Heat oven to 350°F. In small bowl, mix pumpkin and cranberries with fork until well blended; set aside.
- In a saucepan, saute butter, onion and thyme over low heat until mixed. Cook over low heat 5 to 7 minutes, stirring occasionally, until onions are softened. Remove from heat.
- Combine the pumpkin mixture with the onion mixture until blended.
- Remove Grands dough from package, but do not separate biscuits. Cut roll of dough into 20 slices. On a cookie sheets, place slices 2 inches apart. Press center of each slice to form a slight indentation, 1 1/2 inches in diameter.
- Place 1 heaping teaspoon of pumpkin cranberry mixture into each well. Top shaved Parmesan cheese.
- Bake 15 to 17 minutes or golden brown. Remove from cookie sheets to cooling rack; cool 10 minutes. Serve warm.
These make a delicious appetizer to serve and share this time of year. It's easy to put your own spin on a recipe when using Pillsbury! You can find all your Pillsbury baking needs at your local Shaws store. Go ahead and get creative this Fall with the delicious and versatile line of Pillsbury products!
