Kale Chips and Roasted Chickpeas!
This week, we're testing some new recipes or I should say, revisiting them! Over the years I've experimented with a variety of recipes, some successes and some failures. I've made both kale chips and roasted chickpeas in the past. They were both okay, but the kale chips were a bit soggy and the roasted chickpeas were a bit bland. After being inspired by Do It On A Dime, I knew it was time to try it again.
If you haven't checked out Kathryn's YouTube channel or blog, you should. She shares budget friendly tips, great recipes and organization posts. I have learned a lot since I discovered her channel last Fall. I love how honest and down to earth she is, she doesn't claim to master perfection but happy to share her tips and best discoveries with her readers. With that said, if you haven't checked out her sites, you really should!
First Up, Roasted Chickpeas! I've made these before but after watching Do it On A Dime's Video, decided I would try it again. They key I'd been missing? Proper seasoning - I think the addition of the oregano and onion powder made a difference - my kids loved these! Chickpeas are full of fiber and protein so I'm happy they have such a delicious snack! Next Up, Kale Chips! I've tried to make these a couple of times. They are easy to burn and you really have to watch them, which was a great tip from Do It On A Dime, which recommends cooking them for about 8 minutes. I also added lemon juice and just a bit of olive oil which seemed to help me avoid soggy kale chips. SCORE! They really perfected this recipe which I've wanted to love for so long - and we FINALLY do! You can see Kathryn's video here!
I hope you guys do check out her blog and videos and give these recipes a try too! The tips helped me perfect these snacks and my girls and their lunchboxes are happy! Always nice to see something different in there!

DeleteThe only thing I've ever done with chickpeas is try to make hummus with them. And I read the instructions wrong and bought just regular chickpeas, and not the canned variety - the dried ones do not grind up in a blender at all xD
ReplyDeleteI will definitely take a look at Do It On A Dime - I like people who are willing to say that they don't always do things perfectly (they're my kind of people ;) ).
That must have been some crunchy hummus ;) I do think you'll like that channel, she offers a lot of candid, no nonsense advice.
