Almond Butter Banana Oatmeal Bars (Easy Recipes)
We had a busy weekend with family visiting, four theater performances, bake sales and everything in between. Sometimes it's hard to fit it all in so yesterday afternoon, when everything was completed, I was playing catch-up. Usually part of my Sunday involves getting ready for the week ahead, hitting the grocery store and meal planning. Imagine my surprise last night when I realized I didn't have much for breakfasts. I whipped up some overnight oats for the girls, a fuel filled breakfast of oats, chia seeds and strawberries. My husband usually grabs his breakfast and goes, so eating from a mason jar while driving sounded a bit challenging. I figured it was a great opportunity to test out this Oatmeal Bar recipe.
Almond Butter Banana Oatmeal Bars

Almond Butter Banana Oatmeal Bars
Ingredients
- 1 1/2 cups oatmeal
- 2 tablespoons brown sugar
- 1 tablespoon chia seeds
- 1/2 teaspoon kosher salt
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1/2 cup almond milk
- 1 large egg, slightly beaten
- 1 ripe mashed banana
- 1/4 cup almond butter
- Mix together oats, brown sugar, salt, cinnamon and baking powder in bowl.
- Add egg, milk, vanilla, almond butter and mix, then add banana and chia seeds and mix until combined
- In lightly sprayed 8x8 baking dish, spread oat mixture and bake for 350 degrees for 20 minutes.
- Cut into squares and enjoy!

Yum! Will have to try these! I have someone in the house who enjoys buying poptarts once in a while - I have never had a taste for them though. I always wanted to like them, but never do...weird I know :-)

DeleteI may or may not have had poptarts for dinner last night xD The Mister was out on the motorcycle all day, with no idea of when he was going to be home, and had a stressful Saturday on top of it all, so our Sunday evening was quite lazy. And poptarts, well, he's the one who brought them home, so no shame from me xD I grew up on poptarts for breakfasts on the weekends and I turned out fine ;)

:) That was funny - I agree, so many people grew up on Poptarts and still enjoy them but there is just something about him keeping them in his glove compartment that was just wrong.
DeleteWhat I love about these is that the oatmeal bars are completely economical and tasty too! You can increase or decrease the amount of sugar as you like - I've seen other recipes with 1/4 - 1/2 cup but 2 tablespoons is just fine for us!
That does sound a lot more practical than a mason jar. I can't what to hear about the performance.

DeleteI am so glad you included your husbands review! My husband does not eat many pop tarts these days, but still does have them on occasion because of how portable they are. I will have to try these for my husband as he needs breakfast on the go most days of the week. Putting almond butter on the shopping list :)
