Avocado Fudge Cookies

Every once in a while I spy a recipe I can't resist. When I came across these chocolate, fudgy cookies and discovered they were made with avocado, I was pretty skeptical. In theory it could work but I had to give them a try for myself. Packed with avocado, flaxseed and carob powder, this isn't your ordinary cookie. I was pretty thrilled with the outcome and all my "testers" seemed to agree this was the most delicious cookie they've had in a while! You have got to try these!
Ingredients
  • 1 Ripe Avocado, pitted
  • 1/2 cup coconut sugar
  • 1 tablespoon ground flaxseed
  • 2 tablespoons vanilla
  • 1/2 cup unsweetened carob powder
  • 3 tablespoons chocolate chips 
  • 1/2 teaspoon baking soda
Directions
  1. Preheat oven to 350°
  2. Line a baking sheet with parchment paper
  3. In a bowl, combine avocado, coconut sugar, flaxseed, chocolate chips and cream together until smooth 
  4. Add water and baking powder
  5. Spoon cookies in tablespoon sized cookies on parchment paper
  6. Bake for 12-15 minutes and allow to cool 


These will be fudgy and delicious! No flour, no oil, no dairy. Different than the usual suspects but celebration worthy! Like, end of the school year celebration worthy!

    1. Oops, Trader Joes, Trive Market or a health food store. Coconut sugar is more commonly found these days!

  5. I have seen recipes for other avocado recipes, and didn't know whether to trust them! You I trust :) I was going to ask about Carob powder, but I see Carla already did! Added to the Trader Joes shopping list.
