Life Lately: Late Summer
It's safe to say that we are in full harvest mode here! When we got back from Cape Cod, we were absolutely inundated with peppers, zucchini and tomatoes! It's been hot here and not a normal hot for this time of year, it's also been super humid which is been perfect for our garden!
Last week I tried Kris' recipe for zucchini muffins. They did not disappoint! I made a batch for the house, and a batch for the freezer. I still have 5 zucchini in my refrigerator and at least 10 more in the garden, ready to be picked. It's safe to say there will be more grating and baking in our future!
We've also been enjoying delicious, simple flatbread. It's SO good! I used Joseph's or Trader Joe's flats, top them with fresh tomatoes, peppers, basil, oregano and cheese and bake for 10 minutes for a fresh, delicious take on pizza. I can't get enough of it!

My girls also love popping fresh tomatoes into their mouths. So fresh and good. Few things give me as much joy as a quiet summer afternoon, watching my girls laugh and pick from the garden we planted all together. These are the memories I hope they'll cherish. I know I will!

Very sweet memories indeed! My latest obsession with zoodles is to cook them with a tiny bit of sesame oil, soy sauce and some sesame seeds! So yum!

DeleteIsn't amazing how the humidity makes the plants go nuts!? The humidity here has lessened so I am hoping I can catch up on everything :)

DeleteI agree with Big Rigs .... humidity can make plants double in size in one day. I was feeling overwhelmed with harvest a few days ago. So much and not enough time to get it done. I hate to see it wasted.

DeleteYour garden updates always make me jealous! I did get some yummy cherry tomatoes from the farmers market though, so it's the next best thing.
