Tabouli Salad...without the bulgur!

I love tabouli, I seem to go through quarts on a weekly basis so I decided to give a shot at making my own.  This recipe is for a no blugur tabouli salad, simply because I felt like it would be tasty and because I didn't have it!  But, when you have a craving sometimes you just have to make do with what you have!
  • 1/8 cup olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 1 small onion, chopped
  • 1 bunch fresh parseley
  • 1/4 cup chopped mint
  • 3 tomatoes, chopped
  • 1 cucumber, peeled and chopped
  • freshly ground pepper and sea salt to taste
  • 1 tablespoon vinegar
Add oil, lemon juice, onions, parsley, mint, tomatoes, and cucumber; toss to combine. Season to taste with salt and black pepper. Cover, and refrigerate for at least 1 hour.
This was pretty chunky - I would do finer chopping next time but still, it was deliciously fresh and tasty!  My daughter loved taking it for school lunch with a pita!  Speaking of that little lady, yesterday was her 9th birthday! 9! I'll be posting more pics of our fun celebration soon!
Happy Weekend Everyone!  We are off to celebrate a very special girl's bday who is turning 5!

Linking up today at The Home Girl's Fiesta Friday and Townsend House!  Come share!

  1. This looks amazing! I have never made tabouli, but my mom used to make it a lot when I was younger. This is definitely the kind of meal I gravitate towards when it starts to get warm. And I think a chunky salad seems perfect :-) I hope you will come and link up at what i am eating

And that 5 year old is very excited to celebrate her birthday this weekend :-)

  2. Yummy! I discovered tabouli salad last year and I am in love with it! I haven't had it in a while and it sounds so good right now. Especially with a pita on the side, delicious!

Happy birthday to your girl! And happy birthday to the almost 5 year old girl, too :) Have a great mother's day weekend!

  3. Looks tasty!! I love all these flavors but have never tried making my own....I will have to give it a go. Happy Birthday to Riley...hope you had a great celebration :) And happy Mother's Day to you! Can't wait to hear what special little things your girls do for you.

  4. I love this fresh salad. Hope you enjoyed the birthday celebrations.
