Tabouli Salad...without the bulgur!

I love tabouli, I seem to go through quarts on a weekly basis so I decided to give a shot at making my own.  This recipe is for a no blugur tabouli salad, simply because I felt like it would be tasty and because I didn't have it!  But, when you have a craving sometimes you just have to make do with what you have!
Ingredients:
  • 1/8 cup olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 1 small onion, chopped
  • 1 bunch fresh parseley
  • 1/4 cup chopped mint
  • 3 tomatoes, chopped
  • 1 cucumber, peeled and chopped
  • freshly ground pepper and sea salt to taste
  • 1 tablespoon vinegar
Directions:
Add oil, lemon juice, onions, parsley, mint, tomatoes, and cucumber; toss to combine. Season to taste with salt and black pepper. Cover, and refrigerate for at least 1 hour.

This was pretty chunky - I would do finer chopping next time but still, it was deliciously fresh and tasty!  My daughter loved taking it for school lunch with a pita!  Speaking of that little lady, yesterday was her 9th birthday! 9! I'll be posting more pics of our fun celebration soon!

Happy Weekend Everyone!  We are off to celebrate a very special girl's bday who is turning 5!

Linking up today at The Home Girl's Fiesta Friday and Townsend House!  Come share!

  1. This looks amazing! I have never made tabouli, but my mom used to make it a lot when I was younger. This is definitely the kind of meal I gravitate towards when it starts to get warm. And I think a chunky salad seems perfect :-) I hope you will come and link up at what i am eating http://www.townsend-house.com/2013/05/what-i-am-eating.html

And that 5 year old is very excited to celebrate her birthday this weekend :-)
